The method of aging coffee beans was discovered by seafarers who exposed the beans to the humidity of seasonal cyclones and then dried them. They discovered that this aging process caused the beans to swell, imparting a certain sweetness and reducing their acidity. The aged Malabar coffee gave rise to the name, which evokes the history of our ancestors who worked on maritime trade routes to India and encountered these seasonal cyclones while trading coffee and other goods from the East.
