This harvest from the farming community is a small and limited quantity (“microlot”). The community is characterized by its long experience and cohesion in managing farms and their crops, such as coffee crops, and they decided to use the anaerobic drying and soaking method using tropical fruit.
The Huila region has become renowned in the coffee world for its exceptional crop production, and many consider it the best region in Colombia, especially for microlots. This is thanks to its fertile geography, a large and experienced farming population, warm subtropical forests, high altitudes, and diverse local climate.
The "Palestinian" community are Colombians of Palestinian origin, who were born in Colombia or immigrated there. Their province is located in the southern Huila Valley, and is characterized by its tropical diversity of fruits, forests, and other resources. Many of them were born into farming families or learned agriculture, so many of its inhabitants are distinguished by their agricultural expertise and passion for producing outstanding crops every year.
To produce this batch, the coffee undergoes a meticulous process that begins with the careful selection of the ripest, most pink Bourbon beans. These beans are then brewed with a special blend of tropical fruits, a technique that gives the coffee a unique complexity and depth of flavor. The subsequent 12-day anaerobic fermentation process creates a truly exceptional coffee experience. The final result will be a breathtaking symphony of flavors.
