Spring Lever Machine: Spring lever machines are the traditional way of making espresso; literally where the expression of "pulling espresso" comes from. Spring lever machines will naturally give a a pressure profiled extraction from approximately 11bars to start and gradually down to 0bars. It also give the user the option to alter the pressure profile by slowing (or accelerating) the process by applying additional pressure to the lever.
